1-3 SERVINGS
INGREDIENTS:
- 400ml light coconut cream
- Keens curry powder (add to your liking)
- 1 Teaspoon of garlic
- 1 Red onion
- 1 Red capsicum
- 1 Green capsicum
- handful Green beans
- handful Snow peas
- 1 Zucchini
- 1 Broccoli
- 500g diced chicken tenderloins or breast
METHOD:
- Heat a large pan with a drizzle of olive oil
- Dice onion & fightly fry
- Dice chicken and brown in pan (~4 mins)
- Add coconut cream and curry powder
- Simmer (10-15 mins)
- Add all veges for last 5 minutes stir, I like veges to still be crunchy!!
