4-5 SERVINGS
INGREDIENTS:
- 1 packet of cauliflower rice
- 200g Short cut Bacon
- 1/2 brown onion
- 1 cup peas
- 1 cup corn kernels
- 1 capsicum (green or red) chopped Large handful of spinach
- 1 carrot
- 1 tsp. Garlic
- 1 large red chilli
METHOD:
- Heat garlic and onion in a large pan
- Add bacon and fry until bacon is cooked
- Dice carrot, and capsicum & add to pan
- Add peas and corn
- When ingredients in the pan are soft, add cauliflower rice and stir for 1-2 minutes
- Chop chilli (if you’re using it) and add to the top of each bowl or plate to serve
